Made Gluten-Free Muffins

Kicking off our week of eating gluten-free, I decided to bake Gwenyth Paltrow’s sweet potato gluten-free muffins.  Click here and you can get the recipe and see her bake them with Rachael Ray.  They are super delicious, although mine had a very gloopy consistency and they take a lot of maple syrup, which is a bit pricey.  But the kids loved them, and if maple syrup goes on sale, I’ll make them again!
