Kale grows great around here and I have several dinosaur kale plants (they look like little tropical trees) growing in my veggie garden. I love kale, which I usually blanch and add to things like enchiladas or pasta, or cook like spinach. It is super yummy if you cook it with onions and then add coconut milk and curry.
Today was our annual ‘Night Out’ block party and I needed to bring a big potluck dish, and so I decided, since I have so much kale in my garden, to make a big kale salad. I also had lots of cherry tomatoes too, so I did some internet searching and the first link to show up was 10 Best Kale Salads. Pefect! I chose “Shredded Kale Salad with Tomatoes, Olives and Feta,” since I had all of the ingredients. It was really easy to make, and perfect to make for a crowd. I didn’t know I needed to massage the kale, so that was kind of fun. And this is a recipe that you can easily modify to make your own. Like I added artichoke hearts because I LOVE artichoke hearts.
I have to admit, it wasn’t a huge hit at the party. I think some people are a little wary of kale. But I was pretty happy to have lots of leftovers, because another bonus to kale salad is that it tastes great the next day, unlike other salads. If your a fan of kale, you should try this Greek-like kale salad. Yum!
