Making Vinegar

So I didn’t make vinegar in a day.  I’ve been actually ‘making’ it for about eight months.  This is just the first time I’ve taken some out, put it in a jar, and used it.  I’ll explain…

It all started with a big box of red wine that I didn’t drink.  It had been in the cabinet for far too long, didn’t taste quite right any more, but I didn’t want to pour it down the drain.  So I read up on how to make vinegar, went to the ‘make your own wine and beer’ store and bought a ‘mother‘, went to Goodwill and bought a glass container to make it in, poured the wine and the mother into the glass jar, covered it with cheese cloth, and waited.  And on those rare occasions when we don’t finish a bottle of red wine, I add the remainder to the jar.

I keep the jar in a cabinet, and whenever I open that cabinet, wow, it smells like vinegar.  So the other day when I opened this not often used cabinet I decide, Hey, it’s been long enough.  Time to try the vinegar.  And believe it or not, I have some incredibly tasty vinegar on my hands – much better than the stuff I buy in the store.  You can really tell that it’s made from red wine, but it doesn’t have a bite to it.  It’s a much mellower vinegar, and its delicious.
